”Is Christian Escribà a pastry chef? In a global world and full of transversality between a bunch of disciplines we can define Christian as a cross-disciplinary and global creative, that uses sweet world as his own language to express oneself.
This is the universe where Christian breed his seed to create his own world, an unique world in constant evolution, with an auto-pressure difficulte to see in other subjects, where continuous project reinvention is full of edibe walls, explosive cakes, sugar rings, impossible wedding cakes and flying cakes.”

“Looking how Patricia Schmidt works is like going into a fantasy world and both very real. Her work, a divine metaphor of the preciosista sculpture, the pictorial mannerism, the subtle watermark, the conjuring tricks impossible, establish a prodigious example of what it might define as a " high sweet goldwork”.
Fascinated by art and sweet making since he was 12 years, Patricia learned first in Brazil, her native country but later in The United states and Great Britain too where she developed her knowledge and her encyclopedic cosmopolitan sensitivity.”
Xavier Agulló, National Price of Gastronomy for the Royal Academy of Gastronomy (Best Journalistic Labor).
